CREME DE MENTHE BROWNIE-CAKES (GLUTEN-FREE)

St. Patrick's Day birthday treat:
My boyfriend's birthday falls on St. Paddy's Day and I like to make him something homemade and GREEN for his birthday treat. Lately I have been craving my aunt's recipe for creme de menthe cake, so I decided to experiment a bit and try out a gluten free, brownie version (I call them brownie-cakes). This is a super simple recipe with very few ingredients - score!

CRÈME DE MENTHE BROWNIE-CAKES
Yield 12 brownie cupcakes
Ingredients:
1 box of Betty Crocker's gluten free brownie mix (and the ingredients for the brownie mix (2 eggs and 1/4 c. of melted butter))
1/4 c. Creme de Menthe liquer
1 jar Hershey's fudge topping
Topping (frosting):
8 oz. tub of cool whip (I used extra creamy)
3-4 Tbsp. Creme de Menthe liquer
Directions:
Preheat oven to 350 degrees F. Place cupcake liners in a cupcake pan.
Mix the brownies according to the box directions; add in 1/4 c. Creme de Menthe liquer.
Pour batter into cupcake liners (2/3 full). Bake for 20 minutes or until a toothpick comes out mostly clean. Cool brownie-cakes completely.
"Frost" the brownie-cakes with the Hershey fudge topping.
In the cool whip tub fold in 3-4 Tbsp. Creme de Menthe liquer and spread the cool whip mixture over the fudge topping. Chill until ready to eat.
*Add St. Patrick's Day sprinkles for festivity :)
